I then tried creating labels my own way, with the File->New->Labels,
and inserting a single-celled table in the first label, setting the
row height to 1.00inch, fixed (not auto-height), and center text
vertically. Then I inserted the fields using the
Insert->Fields->Other (Database). After formatting and propagating to
the page, I opened the DataSources browser.
You must be some kind of masochist, Matt:-) The technique I use and
described in the tutorial is very simple and it works. I don't
understand why you have complicated it with your hybrid approach.

Not really, Peter. I looked at your document, and thought about how long
it took you to lay out that table so the measurements were just right,
and how long it takes me to do just one cell, and it's a no-brainer :)
Besides, I understand, and I suppose you do, too, that when one is doing
a Labels document, OOo only will produce one page of labels, because
it's just a window into the database, not the actual data. It's not
meant to give you a static picture of your database, except on real
paper. If one wants actual editable document pages, they must do a
MailMerge, and edit the resulting file.
Matt,
The whole point of my templates are that they are multi-page, so you
really can fully populate a database-worth of labels!
As for laying out 2, 3 or more equi-sized table columns; that's also a
no-brainer and only takes a couple of minutes. I'm perfectly willing to
knock up any standard Avery-style label templates on request, give or
take a day or two.
