I'm not sure, if you can uninstall the not needed languages. I know,
that you need for example the dictionary "english-US", otherwise the
spellcheck won't work in any other language. I don't know, if this is
true for German or any other language too. 

But you can tell OOo, that it should use only the two languages, you
need. Go to Tools | Options | Language Settings | Linguistik and have a
look if the option "check all languages" is selected. If yes, please
uncheck it.

You have more ways to select the language of your documents. The first
is: 

Tools | Options | language settings | language. 
There you can choose the default language of your documents. I assume,
that you selected there Slovak. :)

Second: 

You can define a paragraph template. (I'm not sure, how to call this in
English - I hope, you understand, what I'm talking about). Create a
second paragraph style, maybe standard-en and when you're writing,
choose this style for your text. Then you can check your spelling in a
different language.
