I think that you may have (mis)used styles in your document. Have a look at the very good "Styles" manual on http://documentation.openoffice.org Also turn on "View" -> "Non-Printing Characters" to see where exactly spacing characters are inserted. Note also that double spacing is for lines within a paragraph and not for spacing between paragraphs.
