You see the custom radio button, click it and you will be able to set the install path. You are right there is no step-by-step because most users do not need this info and those that do should be technically capable or at least that's the theory. I think that is because you have placed the install image there rather than OOo. I cannot offer much guidance as I am not a Windows user; however I can tell you that from experience on this list, you should set your network drives carefully on the workstations so as to avoid locking problems.
