In basic terms at present the answer is no. This is one of the many issues with graphing in OOo. There is a bug on bugzilla for this.

What you can do is to select the data range and when you get your data range, you can edit the long and sometimes confusing list to get the proper X axis and Y axis data.

Also note. You also have to be careful that you select XY graph over line graph as a line graph doesn't have an X axis in any way that I learned in school.
