Depends.
* File can be openend read-only. Try the fifth icon from top left: 'read
only'.
* Files can be saved read-only. See Tools|Options|OpenOffice.org|Safety
* Calc files can be protected: choose in the menu: Tools|Protect
document|...
I hope one of those is what you need.
