Just about everything you need to do with Writer involves styles. Even bullets are governed by them. I recommend you read the appropriate section of the User's Guide at http://documentation.openoffice.org/manuals/ or the chapters on styles at http://documentation.openoffice.org/manuals/oooauthors2/. The Getting Started Guide has one chapter on styles and the Writer Guide has two chapters on styles.
