I usually have the opposite problem, I don't want to have live
hyperlinks in my spreadsheets (contact spreadsheets with 10000 rows or
more are already slow, and accidentally opening the mail client every so
often doesn't help.  I find that if you doubleclick to edit the grey
one, it becomes a live hyperlink.  doubleclick and add a space at the
end of the email address.  To get a live hyperlink to become dead,
rightclick, or option/click and choose "Default".
