In OOo the language is a font setting.
You can change the language in which one word is checked by selecting
it, and go to the font dialog (just right click, select fonts, select
the language).
Still cumbersome?. Well, right click on a word that is marked as
misspelled (it has the red underscore), a menu will open offering some
alternatives.But if the word appears in some other dictionary different
from the default you will see two new items in the menu "The word is in
language" and "The paragrah is in language". Selecting the first will
change the word language, selecting the former will change all the
paragraph.
But for serious work in various languages there is a much more powerful
tool. Styles. You can set the language of a style (as a font style). If
you work with multiple language often setting some styles for each
language is the best approach.
But this question comes quite often to the list, so it's probably true
that this power is "hidden" and maybe something can be done to make it
more easy to discover.
