Hi Jessica,
Rather than something you need to do, it's one that you need not do. When you install, there's a dialogue box with check boxes to indicate which Microsoft Office files types you want to open with OpenOffice.org. Don't check any of them. This won't stop you from opening these files with OpenOffice using 'file / open', it just means that the default program for these files won't change, as it has with you previous installations.
