Judging from your story, you're one of the many Mac-users that start using OpenOffice. Perhaps this should be clearly stated on the downloadpage, but on a mac the default application when you start OpnOffice is Writer. If you want to use one of the other applications you must open an existing file created by e.g. Calc or goto File>New>...
You will find the other applications listed there.
