Under default; languages, I have selected "English (Canada) and I can
type in the current date, but it would be nice to just insert it rather
than type it.
You have the View->Field Names option turned on, so it is telling you,
"There is a fixed date here." If you turn it off, you will see the date.
Either way, you'll get the date when you print.
