First, I didn't know OpenOffice (OO) had grammar checking. I know it has spell checking and hyphenation checking but I didn't know about grammar. Where do you set this?

For spelling you need to have the right dictionary installed *and* have enabled that language, either as the default for your document(s) or on a paragraph by paragraph basis.

To do it for all your documents, go to Tools>Options>Language Settings>Languages and choose the "Default language for documents" from the list. If the language you choose has a small tick mark (like the Nike logo) and "abc" next to it then the language has the dictionary installed and can be spell checked. If not, then you need to install the dictionary via File>Wizards>Install New Dictionaries and choose the variant of German you need (I assume Swiss but ...). Once the right dictionary is installed you can choose the default language and OO will be able to spell check properly.
