There are 3 places I can think of in OS X where multiple icons for the different programs could be placed during install. The Desktop, the Dock and the Applications folder. This is a 'defficiency' in OpenOffice.org not OS X, though I have to admit I don't know whether it is possible to acheive this whilst OOo still runs in X11. Hopefully (?) this is be resolved when there is a 'proper' version for Mac that uses the Aqua interface.
For an easy workaround, create blank templates for each document type, and put them on the desktop, dock or applications folder.
