On my install (2.1 linux Ubuntu/deb) unchecking Use System font causes
the interface to default to the thin OOo default font. Checking returns
to the system UI font (I *am* using Gnome).

I believe that it does. For example (again on 2.1) on that same "View"
page I have the option of selecting icon size & style. Style confirms
that it does get info from my Gnome desktop as the selection brings up
the option to select several of the Gnome desktop themes in addition to
the OOo "Default" theme. I can confirm that selecting one of the Gnome
themes (example Industrial or Crystal) changes the icons to those
themes. So I suspect that the system font info is obtained from the same.

You might try downloading & converting 2.1. I used "alien" to convert
the RPM's to Deb's with no difficulty at all. Then used dpkg to install.
It could be that there were "fixes" between 2.0 and 2.1 that might fix
your problem. Unfortunately I am unable to easily find any proper
release notes on the OOo site that would show this.
