The question has been asked often and has me and others not familiar with the Mac baffled. I do not understand why you cannot create icons for the other applications.
I gather that the only way to open the other applications is to launch the software and use File >New >> You can find a lot of information at this site: http://documentation.openoffice.org./ There is a special support page for the Mac: http://porting.openoffice.org/mac/support.html . I understand that, as long as you have read the FAQs, it is acceptable to post questions to the Mac dev list.
