my original question is at the end...

With the helpful questions/suggestions of

NoOp <[EMAIL PROTECTED]> and TerryJ <[EMAIL PROTECTED]>
i could overcome my own dumbness and find this webpage:

Following that idea i could identify my problem:

Because i've tried to offer more than the few default fonts to my users
i've looked around on our disks with "spadmin". Now "spadmin" found
some *.afm and *.pfa fonts, but obviously the mechanism of the
font-drop-down-menu got confused with those (or only some of them?).

After i've removed all links to those *.afm and *.pfa fonts,
now the font-drop-down-menu does no longer crash OOo.
