Removing Firefox (or OOo) in Ubuntu does remove a considerable amount of software ala ubuntu-desktop because they are bundled as a meta package on installation. However, it's quite alright to remove ubuntu-desktop and it's meta files, just remember to reinstall it before doing a major distro upgrade.
