I cannot replicate your problem. When I click on a OOo document or
spreadsheet, it opens as expected (takes some time, because first X11
has to open).
Because I have several versions of OOo on my iMac, I can either
doubleclick (Open) or use Apple-click (Open with... and choose my OOo
version).

Maybe the solution for you is to click on an OOo document, then go to
File Info (Apple-i), look at the 5th item: Open with, choose
OpenOffice.org and then click on Change All.
