You can have both OpenOffice and Microsoft Office on the same computer,
as I do at work.  There is a version of OpenOffice, which includes Java,
but I don't use that.  You can also get the latest Jave from java.com. 
Once you have Java installed, you configure OpenOffice to use it, by
clicking on Tools > Options > Java.  Let it sit for a minute or so to
find what Java has been installed and select the newest.  As far as I
know, there's no problem with having multiple versions of Java, but I'm
no expert on it so...  You'll find icons for OpenOffice in your Start
menu.  You can create shortcuts from them, the way you'd create any
other shortcut.  I'm not running Windows here, so I can't provide a
description of how.  You don't normally have an icon for Java as it is
used by applications and not directly by a user.
