You don't, you secretly install OOo(OpenOffice.org) on their machines,
and change the excel-menu entry/icons on the desktop so that it points
to OOo Calc instead :-)

No, seriously, all you have to do is save in the Excel format.
Open the OOo Calc document in OOo, use the Save As menu point (under
File) and below the place where you write the file name, you can change
the format of the document (drop down with many formats). Select here
"Microsoft Excel 97/2000/XP (.xls)" and save the document.
