If by video you mean moving images... you don't. Also if you are
asking how to open and modify a PDF in OOo you can't. I don't know
of any text processor application that can edit a PDF other than
maybe adobe. I am not sure even Adobe can edit a PDF.
It is possible to add a link to a video file in a pdf. The video would play in
the default player when the link is clicked.
