Do you just need to add the German dictionary, or are you desiring the GUI in German as well? Dictionaries and suchlike language files are here: http://lingucomponent.openoffice.org/ download_dictionary.html . I don't know enough about your system/OS to be able to tell you how to delete a program there. As to just installing an additional version, there is a point in the beginning of the installation where you can specify a different directory from the usual one. You may have to choose advanced rather than default installation to get the choice.
