Let's take this one step at a time

Within the OpenOffice application you can do >File and >Open and that will give you a little window that shows all the files you have on your folders. When you have located the particular file you want to open (Word, Excel, Writer, or Calc for example) you can choose that by double clicking or single click and then click open. That will enable you to open and edit any word documents you have.

To save them choose save as and the choose the "save as type" and make sure the "automatic file extension" is ticked.

What do you want to do with pdf files? OpenOffice will create a pdf if you want it but it is not yet a file type that can be edited.
