Language packages for the most recent version of OpenOffice.org can be found at ftp://ftp.free.fr/mirrors/ftp.openoffice.org/extended/2.3.1rc1 , including a UK language package.
You can also download the UK English spelling dictionary and UK hyphenation dictionary and UK thesaurus by selecting File -> Wizards -> Install new dictionaries within OpenOffice.org
Select the UK dictionary in each of the three lists. But this won’t change the spelling in menus. For that you need the language package.
Also the thesaurus obtained in this way is actually an American English thesaurus. For a UK English thesaurus you can download from http://www.8daysaweek.co.uk/forums/viewtopic.php?t=306 I don’t think this thesaurus comes with the UK language pack.
You may also obtain the UK spelling dictionary and UK hyphenation dictionary from http://wiki.services.openoffice.org/wiki/Dictionaries , including a spelling dictionary of British Oxford English spelling as opposed to the more normal British Cambridge spelling. (Many scholarly journals and publications [and most United Nations publications] required Oxford English.)
You can select portions of your text for spell checking in any of the languages and dialects available, for example, if quoting from an American text, select the American text and under Format > Character -> Font select under language ‘English (USA)’. That section of the document will be spell-checked in US English while the rest of the document is still in UK English.
