 Slide transitions are marked with a diamond between the slides in the
Slides pane (on the left in the default edit mode). Select one slide, then
go to the Slide transition task on the right hand of the screen (task pane),
select none and Apply to all.
To remove the custom animation instead I am afraid you will have to select
the text boxes to which they are applied one by one and remove the animation
using the Custom animation tab in the task pane.

I also find the slide transition quite annoying, however I am very much in
favour of the bullet by bullet appearance of the text in text frames. I find
that this helps in maintaining the attention of the audience on what you are
discussing rather than on reading what is coming next :-)
