This question is a little ambiguous.

Are you asking just that the default behaviour of the .doc file, when opened in Word, will be not to display the changes? In fact, I'm not sure that you can do this: even between versions of Word, I believe that this behaviour is a bit of a minefield. In particular, removing the tick from Edit | Changes > | Show in Writer does not prevent the display of changes in Word. And anyway, if you achieved this, it would be a quick move for your correspondents to switch on the display of changes - intentionally or otherwise. I can't think that you would be happy with that.

If, instead (and as I imagine), you want the changes not to show or to be able to be shown - so that the recipient cannot discover the editing process you went through - the simplest way is just to accept the changes, of course. Go to Edit | Changes > | Accept or Reject... and select Accept All.

Perhaps you want to keep the record of the changes in your document, but still not to allow recipients to see them? In that case, the obvious solution is to keep your own copy of the document (preferably as a native .odt file) and save a separate copy whenever you need to pass it on. Accept all the changes and then use File | Save As... to create your required clean .doc version.

Another possibility, of course, is to use a file format designed for final versions, not .doc (or .odt, for that matter) - which is designed for documents potentially requiring further editing. How about exporting your final version as a PDF file and sending that?

This is a genuine problem for those distributing edited documents: the UK government was embarrassed not so long ago after distributing an announcement as a Word file with hidden changes. Recipients - including the press - were able effectively to follow the debate that had resulted in the published policy.
