OpenOffice.org mostly does not concern itself at all with the keyboard. It simply receives characters from the standard character interpretation routines of your operating system (and implements various functions if the CONTROL KEYS or ALT keys are pressed).

As to your problem with your physical keyboard, at least that's what I think you are referring to, you can obtain a free Macintosh compatable keyboard editor which allows you to edit your virtual keyboard as you wish, in your case, edit it to match your physical keyboard. I’m not a Mac user so don’t know how good this is or what gotchas might be associated with it, but it is both free and widely used so it won’t hurt to give it a try.
