That would depend on your laptop model.  For example, on ThinkPads, it's
usually the F7 button that changes display modes.  This applies to all
applications, not just OpenOffice.  Also, you can often also configure
multiple displays, so that the laptop display shows one thing and the
presentation displays another.  Again, this is dependent on the laptop
you're using.
