The reason this is happening is that, by default, OpenOffice saves in
the ISO standard ODF file formats, which Microsoft refuses to support. 
You'll have to save in Word or Excel formats, depending on document
type.  You can do this when you "Save as", by selecting the appropriate
format from the drop down list.  Also make sure automatic file name
extension is selected.  You can also e-mail directly, by selecting File
> Send > E-mail as Microsoft Word (or Excel).  Another method is to
export or send a PDF of your document, provided your instructor agrees
to accept them.

You might also take this opportunity to advise your instructor about
OpenOffice or, failing that, the Sun ODF plug-in, which will enable her
to read & write ODF documents in Microsoft Office.
