There's a Windows tutorial on creating shortcuts at <http://support.microsoft.com/kb/310417>.
The programs you want are:

   Text documents: swriter.exe
   Presentations: simpress.exe
   Spreadsheets: scalc.exe
   Databases: sbase.exe
   Drawings: sdraw.exe
   Mathematical formulae: smath.exe

and will be in c:\program files\openoffice.org 2.4\program unless you installed OOo somewhere else.
