That can be done as part of the install, however afterwards you can do
it by changing the file associations. Here's how:
Changing file associations
Right click on file icon
Select Open With > Choose Program...
Check "Always use the selected program to open this kind of file" and
choose the desired application.

Since you had a trial version, I assume it was Office 2007. If so, you
may have saved your files in the new formats, which OpenOffice can
read. If this is the case, you may need to install the free viewers
from Microsoft. If you use them, install them before changing the file
associations, as they'll grab the associations for themselves, without
asking permission, as OpenOffice does.
