As additional info, currently my network looks like below and I would like to
switch from em1 to p4p1 exclusively, or perhaps use em1 as some sort of backup
or for the management?
2. Also, I’m not sure I understand fundamentally the differences between the
different Network types (VM, Display, Migration). But that’s more for
insotmation.

You can simply edit the network bindings from the engine:

Is up to you to choose if you want just to use the 10 GbE NIC or if you prefer
to create two distinct logical networks or an active-backup bond of the two
interfaces.
I prefer little downtime (eg only temp network loss), but a full downtime
(shutting down) could be acceptable.
