I would recommend you to keep all Vm configs on a separate location, so you will be able to use virsh to start the VMs all by yourself (until you recover yoour Hosted Engine in a hypothetical failiure). Libvirt has ( in one of it's dirs ) all running VMs' configs - so just back them up.
Also, virsh requires a pass in order to be able to execute commands. I use this alias on all my hosts: virsh='virsh -c qemu:///system?authfile=/etc/ovirt-hosted-engine/virsh_auth.conf' Then you can test with 'virsh list' (don't forget to "source" your .bashrc).
