Oliver- That's the way it's supposed to work. That account is defined in your GNUstepDefaults file. The username and password is configurable through either your LDAP directory or database depending on how you have setup SOGo. All other accounts added to this section are external accounts. If you want the user to be able to change their password from within SOGo, use LDAP as your user source and the "passwordPolicy" option inside your GNUstepDefaults file.
