That's the intended behaviour of cyrus imapd.

You always have to create mailbox INBOX as cyrus admin, before you can
use it with an email client as a normal user.
That's because you have to give the normal user of the mailbox her
access privileges first.

So that has nothing to do with SOGo or Thunderbird or Outlook or Apple
Mail...

Email clients are creating sub folders in the INBOX on initial connect,
if they are not there already.

Outlook in default mode doesn't use IMAP folders for sent, deleted or
drafts messages. It will store them locally on your client machine.
If you want them to be in the IMAP you can change this behaviour for
Trash and Sent, but not for Drafts.
I am not sure, if this is different for access via openChange.
