I have been stating my height in meters on passport applications for twenty years (i.e. I just applied for the third one). 1.47 the first time, 1.51 the second, and 1.50 now. It hasn't kept me from getting a passport. I left the eye and hair color fields blank. If they want to know what color they are, they can look at the photo with a magnifying glass. I henna my hair, so it's hard to put the color into words. With the first passport, I went to Portugal to help with church building construction. I was the only member of the group (about 30) who brought a measuring tape with metric units. I was also the only one who could speak Portuguese when we returned, not knowing it when we left.
