I think many electronic thermostats have a f/c button on them it's not that 
uncommon. Since its so easy to do the manufactures do it for convenience plus 
they can sell in Canada and in Europe.   My home thermostat has such a switch 
and  the small meat fork device I use on my grill with a temp. prob can switch 
back and forth. I don't think the hotel did it purposely just happened to be 
the equipment they installed.

Many of the app's I have used on my smartwatch (which they don't make any more) 
can toggle between Fahrenheit and Celsius.
