I've had a similar problem before when I've attempted to either add the fat partition or change it to read/write in /etc/fstab. Even after modifying its entry and unmounting and remounting, I still wasn't able to write to the fat partition. I gave up for the night and shut my computer down. The next day, I fired it up and suddenly had read/write access. Go figure. Somehow, remounting with the new permissions didn't seem to be enough, but rebooting was.
