I'd go with a fine-tip pen.  I like this tool for a few reasons.  Its
interface is extremely intuitive, and it can be applied in all kinds of
different situations.  Not only can you quickly record complex
mathematical equations, but you can also insert pictures and graphs
alongside your notes.  Some people would suggest that the wide range of
functionality that the pen provides is a sign of feature-bloat (you can
even use it to play games like tic-tac-toe and MASH), but I think that
it just shows how an elegant and simple design can produce such a
versatile tool.  Unfortunately, I am not aware of any pen
implementations that provide spell-check functionality.

Of course, to use a pen to take notes, you'll need another tool to store
the output of the pen.  For this, I would suggest a simple lab notebook
of bound graph paper.
