First off, I suppose I should introduce myself - I've been lurking on this
list for a little while, after meeting a VAGUE member at a laundromat a
couple of months ago. I do IT at VPR, and I'm dedicated Linux user at home
(currently running Arch and Debian). Hopefully, I'll make to some of the
meetings.
When it comes to building lightweight, headless Linux installs, I always
like Debian. I suppose some people consider it bloated, but the base
install is quite small. My home server is running Debian Lenny stable, and
it's currently using up 680MB, with a lot of packages installed. As a sshfs
to samba bridge, security and stability are probably top priorities, and
Debian's pretty good there (if you overlook the SSH/SSL vulnerability from
last year). I'm not sure if there are any good light Debian VMWare images
out there, but it's a pretty quick install with the netinst ISO. Puppy
Linux is very fast and light, but that comes at the expense of security -
it only runs in single user mode.

Bonus points for every MB under 500mb it takes up. Super bonus points if
it comes as a VMWare image.

I hear nothing but good things about Puppy Linux as a general lightweight
distro. And the ISO weighs in at 100MB.
