I'm a big fan of Supercollider, a real time audio language (http://supercollider.sourceforge.net/), which I used a lot when I was in school. I haven't used it much in the last couple of years - when I switched to using Linux exclusively and installed Yellow Dog on my iBook a couple of years ago, Supercollider was pretty cumbersome to use in Linux, although it looks like it has improved significantly. A lot of people build crazy instruments with custom hardware and Supercollider, and I've read it's pretty simple to use Supercollider with Arduino with Open Sound Control.
