I assume that you're asking how to change the shell being used by a given account. There are probably a few possible ways but since I'm an old-school UNIX guy I just use vipw to edit the password file (do this as the root user or use sudo) and change the shell from whatever it is, such as /bin/bash, to /bin/false.
