Dear Joe,
Let me take a shot at this interesting question.

I am in hiding...
Someone recently suggested that I install http://docksal.io/ for
collaborative work on Drupal projects. It supposedly synchronizes
environments and makes sure the code base Just Works.
In order to Just Work you must first Just Understand.
I am skeptical (and a bit of a tech troglodyte). I have recently come
to appreciate the marvels of git, but not sure how far I want to go down
this containerized route.
Why not just use Docker? Debian is a supported container type. I would
advise staying away from windows and mac containers for now...
Is Docker as great as sliced bread?
Yes.
Do I really need it?
You don't personally. Triangulus might.
Are there special considerations installing Docker and friends on
Debian?
For possible side effects, please review: https://www.impeachara.com/
As you are a Drupal apostle, I, Doc Flint (get it? :^), would say try
mixing Docker and Drupal.
Think "Lime and Coconut"...
Ya take the Docker and the Drupal an' ya' mix 'em both up, ya take the
Docker and the Drupal and ya call me in the mornin'
(ya da da, da da da da, da da di...ya da da, da da da da, da da di...)
Personally I am trying to grapple with the deamons (daemons) of Sphinx,
Enki and ReStructuredText, so count your blessings. Docker with Drupal
will change your life in terms of Operation and Maintenance (the dreaded
O&M tail... :^)
Does Docksal make collaborative work easier?
Rather than be inoculated with a diluted form of Docker, Doc Flint
recommends you deal directly with Docker and discover how really wonderful
collaboration can be. To give you an idea, I might consider using Drupal
in a Docker container...(Oh God I am having a relapse :^)
In summary I applaud your ambition. Drupal is a pretty (seriously pretty
:^) serious addiction. This is a good sign.
Thanx all. Take heart, Spring is next week on the calendar ;-)
Amen Brother.
Kindest Regards,
