This will work in exactly the same way as having a headless server. When creating the machine ensure you have access to either its serial or network port. When you boot the machine you can tell it to mount some media to boot from, then connect to the serial or network to complete the install as you would a headless server. If you've only got serial access then you use a text-only installer. There are some Linux disks that can be made to startup a vnc server at install time (I know CentOS can be made to do this) and you can install from another computer using VNC. The final option requiers your using the non OSS version of VirtualBox.
