This is indeed your choice and if you really need more virtual processors then use the VBoxManage command line tool but in that case please don't open tickets about slow or unresponsive guests. We limit the GUI settings to sane values. Believe me, we already close enough tickets from power users raising all settings to the maximum because they think the more the resources for the guest better.
