It smells like potentially swapping but without metrics, it's just a
guess.

I'm unclear on the memory configuration of the VM's which are running
when the problem happens.

To rule out resource issues on the Host O/S, I'd run `sar -d 3 10000'
and `sar -u 3 10000', start up your VM(s) and when the problem starts,
see what happens.

You'll want a baseline so run the above `sar' commands with the
known-good VM and observe the metrics reported.  Next, run the
commands with the mis-behaving process.  See if anything shows.  :)
