There's plenty of fishing and good camping in the lower and middle Poudre canyon, up to about Indian meadows / the hatchery (one of my favorite stretches is the section including the cabin hole that runs along the cabin that allegedly was used in the TV series Centennial. However, for hiking you want to be higher up, near the lake, AFAIK.

Alternative for combining fishing and hiking would be the Big Thompson / Estes Park / Rocky Mountain National Park area. There's some great greenback cutthroat lakes just outside the park, including Lily Lake, and loads more named and unnamed lakes in the park.
