Maybe I can shoot down there and meet you guys. The Keys are a day trip from my area. I might even have some days off left this year!
Dec/Jan can be off and on down there. I hear the offshore stuff is pretty good, haven't done it myself. Winter can bring the big barracuda up to the flats. Bones & Permit are around but water temps & weather become pretty key. Way down in the keys cobia are known to come up on the flat. Tarpon, snook & reds & trout are still around. And of course, jacks, ladyfish & the other less glamorous species are around as well. So basically everything is there it can just be tougher to find some of them. I've even caught flounder (not on fly though).
