If you have ever worked with it, you'll notice it stains your hands a nice mustard yellow colour. There are quite a few natural dyes out there, and beet is one. There is an article in the Fly tying and Fly Fishing which details the Perkin fly and how the dye colour was originated from Sea Urchin.
